Chef Omar Tovar’s innovative menu fuses Mediterranean inspiration with locally sourced ingredients, creating a uniquely Mexican twist on classic flavors and an enchanting balance of past and future.

San Miguel de Allende’s wine scene has been heating up for years, making this opening primed for local collaboration. The hotel has partnered with Holy Virgin Trinidadbringing to life a range of their wines, such as a Sauvignon Blanc, White Blend (Chardonay, Macabeo & Moscatel) and Cabernet Sauvignon, paired with the vibrant NŌIA menu, which showcases Chef Tovar’s vision.
